Priced at a staggering 873,400 Japanese yen (approximately $6,696 USD) per scoop, the decadent dessert — called Byakuya — is an extravagant fusion of rare European ingredients and traditional Japanese flavors.
Crafted with World-Class Ingredients
At the heart of Byakuya’s opulence is the white truffle from Alba, Italy, one of the world’s most coveted gourmet delicacies, valued at over $15,192 per kilogram. This prized ingredient infuses the ice cream with an intense aroma and complex earthy flavors, elevating the dessert to fine-dining status.
Additional luxurious components include Parmigiano Reggiano, Italy’s famous aged cheese, which adds a nutty richness, and sake lees, a flavorful byproduct of Japanese sake production, which brings depth and umami to the profile.
1.5 Years of Culinary Innovation
The creation of Byakuya was no ordinary kitchen experiment. Cellato collaborated with renowned Chef Tadayoshi Yamada of Osaka’s acclaimed RiVi restaurant to perfect this one-of-a-kind dessert. The research and development process spanned over 1.5 years, with meticulous ingredient selection and fine-tuning of flavor balances.
“We aimed to merge the finest elements of Japanese and European culinary traditions in a dessert that embodies ultimate luxury,” Chef Yamada said.
